It all started with bagels...

Zylberschtein's Delicatessen & Bakery opened in spring 2019, after a successful Kickstarter campaign, supported in a huge part by the the Pinehurst neighborhood.


We’ve grown from a neighborhood Jewish deli into a Seattle destination rooted in tradition, hospitality, and handmade food. While our menu continues to evolve, our focus remains the same: honoring classic Jewish deli recipes while bringing in the flavors, ingredients, and creativity of the Pacific Northwest.

Every day, we hand-roll and boil our bagels using locally milled Pacific Northwest flour, creating bagels with a chewy crust, soft interior, and deep flavor that have become a staple for breakfast and brunch across Seattle. From classic bagels and schmear to stacked breakfast sandwiches and smoked fish platters, our bagels are at the heart of what we do.

We continue to make many of our deli favorites from scratch using family-inspired recipes and traditional techniques. Our matzo ball soup, chopped liver, house-cured meats, and fresh pastrami reflect the comfort foods many of us grew up with — recipes meant to be shared around a table. Our pastrami is seasoned and prepared in-house, then piled high on house-made rye bread with our own mustard for a true deli experience.

Jewish holidays are also an important part of our story. Throughout the year, we help families across the Seattle area celebrate holidays and life-cycle events with traditional and symbolic foods for Rosh Hashanah, Hanukkah, Passover, Shabbat, and beyond. Whether it’s round challah for the New Year, latkes and sufganiyot during Hanukkah, or a full Passover seder meal, we’re proud to help bring people together through food and tradition.
